Energy Ball Recipe

A healthy lunch box snack everyone will love... If you're looking for a healthy snack for your zero waste lunch boxes, you can't go wrong with these energy balls.

 

ENERGY BALLS - LUNCH BOX SNACK

These energy balls are vegan, paleo and amazingly delicious. No one will know how healthy they are! They are quick to make and last for ages. They are a family favourite at our house... 

Energy Date Balls

 

INGREDIENTS

You can grab most of this from the bulk food store for plastic packaging-free!

  • 2 Cups Walnuts
  • 1 Cup Shredded Coconut
  • 2 Cups of pitted Medjool dates
  • 2 Tbs Organic Coconut Oil
  • 1 Tsp sea salt (or a bit more)
  • 1 Tsp Vanilla Extract

 

METHOD

  1. Blend the walnuts and coconut in a food processor until crumbly.
  2. Add dates, coconut oil, vanilla and seasalt and blend until a sticky batter forms.
  3. Roll the batter into bite-sized balls and set in the fridge or freezer before serving.

I keep these in the freezer in an airtight container and they last for ages.

 

Energy Date BallsFINISHING OPTIONS

Roll in extra shredded coconut, sprinkle with cacao powder or if gifting, roll in edible glitter for a nice presentation.

 

These will get gobbled down by kids and adult alike. Just don't tell them the ingredients and they'll think they're snacking on decadent chocolate!
